Antonin Dvorak, lured to America to head up a new music college, is often said to have written this Ninth Symphony out of homesickness. But the work is also an orchestral homage to the composer's new home: his famous cor anglais theme comes from the spirituals of the plantation fields rather than the cobbled streets of industrial England that the Hovis advertisement suggests - it's popular music in more ways than one.
